What a great variety of stuff you get! Ours CSA is strictly vegetables and I know just what you mean about sneaking the eggplant into stuff.


Just a hint. Peel the eggplant and it is wonderful. I always peel the eggplant. The skin is only fine for a short time during the growing season. I never liked it until I started peeling it!


Send that fairytale eggplant to my house. I'm not a fan of the bigger eggplants, but I could eat those tiny fairy tales all day long. Thin sliced, roasted, sprinkled with parmesan, yum!
